Main Duties and Responsibilities
The Head Waiter is responsible for the whole department
•Must check the dining area is set up for the proper number of guests for each meal
•Check for any dietary requirements for any guests
•Make sure there is enough stock of all items used
during the course of your duties
•Must assign each waiter to where they will be serving meals
•Keeping the lounge and dining area neat and tidy at all times by following the cleaning calendars
•Serving guests during breakfast, lunch and dinner
•Serving the guests at tea time before the game drives
•Giving the guests their packed lunches before departure
•Meeting the guests after the afternoon game drive
•Report any breakages that occur to management
•Do regular stock takes
•Keeping the bar and dining areas neat and tidy at all times
•Have a smile on their face while in front of guests
•Be attentive to all guests needs by anticipating what they need before they ask for it
•Prepare the decorations according to the day in the decoration binder
•Follow the specific serving style taught to you by management and found in the serving guideline binder
•Is always professionally presented due to guest interaction
•Ensure that the team are always ready and motivated to maintain high service standards expected from all guests
•Be pro-active with guest requests and planning for all duties that involve the service of food and beverage to guests, as well as maintaining a neat, clean and tidy work environment, back and front of house
•Have good knowledge of all food and drink items utilised and served, with a good understanding of food menu’s, ingredients and special needs
•Maintain staff rosters for leave, off days based on lodge occupancies

Chef – Siwandu Camp
JOB DESCRIPTION
Position:Chef – Siwandu Camp
Responsibilities
Reporting line: Lodge manager
Chef’s duties
•To ensure the cooking and serving of all meals to guests and management whilst on duty or any invited guests
•To ensure your following of the menu matrix
•Note any dietary requirements for guests or staff, and ensure this information is filtered down to the chefs and confirmed with the barman and waiter staff regularly
•To approach and communicate all guests during the evening meal to announce dinner
•To regularly clean all kitchen shelves, crockery and cutlery, as well as ovens and equipment
•To ensure the correct issuing of quantities and quality of product based on the menu matrix for meals on a daily basis
•To maintain a consistent level of cooking during daily cooking duties and ensure that quality guidelines and maintained in accordance with the number of guests and management in camp
•To maintain the correct separation of waste, and to ensure that the waste is correctly disposed of
•To maintain high personal hygiene levels to ensure that food is not contaminated whilst in the process of preparing, dishing and plating
•To complete tasks assigned to you during your shift by the lodge manager or head chef, and to ensure that all food produced is of the standard expected by yourself, the head chef and the lodge management, as well as the guests consuming the food prepared
•To adhere to, learn and practice any new methods of cooking, recipes for dishes that are on the menu matrix
•To ensure the security of stock taken once issued from the main stores at the lodge to be used for the day
•To ensure a clean and sanitary kitchen and back of kitchen area is maintained on a daily basis
•Report to the HOD any maintenance issues that need to be addressed that during the course of your duties hinder you carrying out your duties
•To carry out any other reasonable duties as deemed fit by the lodge management.

Head tent
Duties
•Overall responsibility of the housekeeping and laundry departments of the lodge
•Everything to do with the tents – including daily cleaning and weekly spring cleaning
•Guest laundry – collecting, washing, ironing and returning to guests
•Evening turndowns
•Cleaning management tents and laundry when required
•Early morning wake up calls for all guests
•Taking guests’ luggage to and from the tents
•Keeping the guest toilet near the dinning room clean
•Responsible for all laundry from the guests and lodge
•Responsible for the same upkeep and maintenance of all assets used in your daily duties
•Advise the team on new training and responsibilities, as well as checking on new arrival and stay over tents before arrival or return to camp from activities
•Wipe the solar panels daily
•Rake and sweep areas close and around the tents daily and mop the tent’s front deck when new guests are arriving
•Responsible for all maintenance reporting as well as general upkeep of the tent equipment, furniture and items contained within
